Like almost every other person in the world I vowed to make healthier choices in 2018. I have a lot of big events coming up this year (including serving as Maid of Honor in a wedding) and in addition to just feeling better on the daily basis, I also don’t want to look back at all the pictures from 2018 and hate how I looked. For my best friend’s wedding and some family events I just want to have fun and not have to worry when a camera comes near me, ya know?
So long story short I’ve been trying to eat better. I’ve had a lot of kale, a lot of veggie “noodles” and a lot of brand new Pinterest recipes. (Follow me on Twitter because I’m sharing all my favorite recipes there as I make them!)
However I was not able to find a good recipe for something super simple that I was craving: Apple Cheddar Turkey Patties.
Apples and sharp cheddar cheese might be one of my favorite combinations of all time, especially when you add in a fatty meat like prosciutto. ‘Scuse me while I wipe the drool off my computer. Because a big cheese plate full of prosciutto isn’t something I’m letting myself indulge in at the moment, I went in search for something that could be a bit more forgiving: a lean ground turkey patties with all the flavor I want that I could enjoy with something cool and crisp, like a salad.*
But Pinterest absolutely failed me! Apparently there are 1,000s of tuna patty and chicken patty recipes, but very few turkey patties. A total travesty, if you ask me. I couldn’t possibly be the only one who was craving an apple cheddar turkey combo (and who also has a stack of frozen ground turkey in their freezer).
Long story short: I made my own. It took a few tries to get the spices right (hint: it isn’t complicated but boy did I try to make it complicated) until I settled on something delicious.
The grated apple adds a sweet juiciness that is normally lacking from ground turkey recipes, and the cheddar adds a savory balance. I have been using pretty cheap cheese (because #broke) but if you want your cheddar to really pop I would spring for the good stuff to give your patties an extra oomph. The juicy sweet and savory with a pop of garlic and onion makes these super versatile to add to any meal. Pop them on a salad, next to some vegetables, or make them bigger and eat them like a hamburger. Or just eat them with your fingers by themselves over the counter while you watch Youtube videos, I’m not here to judge.
*Also, can we talk about how after about 5 weeks of consistent healthy eating I am craving crisp veggies? Nothing is better than warm turkey patty with a cool salad and a tangy dressing. Who am I!?
